STORY: Bakery launches cake with a twist to celebrate Mother’s Day and Easter

Lake District cake makers Ginger Bakers have launched a new addition to their seasonal cake range to celebrate Mother’s Day and Easter, a traditional Simnel Cake with a twist.  

Giving the gift of a Simnel Cake has a long tradition, originally linked to Mothering Sunday, these days it’s become linked to Easter. But the reality is the giving of Simnel Cakes is traditionally linked to the Roman Catholic Church, when on the fourth Sunday in Lent, aka Mid-Lent Sunday, people would attend church to make an offering at the altar, known as ‘going mothering’.

And happily, thanks to the team at Ginger Bakers, Mother’s Day and Easter needn’t be all about chocolate… after all elevenses wouldn’t be complete without a slice of rich, fruit-laden Simnel Cake.

This delicious offering from Ginger Bakers hits all the notes a sweet tooth could wish for… but there’s a couple of tasty twists too this as this traditional cake recipe has been given a bit of a makeover by adding tangy orange and lemon peel to their divine bake, along with a hint of orange zest for good measure.

Though it goes without saying that all the flavours we love in a Simnel Cake, like plump sultanas, raisins and cherries, aromatic mixed spices and a generous tot of brandy or two are present and correct.

There’s a wee decorative twist too, this little fruit-filled cake is topped with a layer of marzipan and topped with dainty marzipan flowers instead of the traditional marzipan balls, which are meant to represent the apostles minus Judas. Though the delicious flowers mean that the cake can be enjoyed for Mother’s Day too, win/win!
