DAWN UK & IRELAND LAUNCHES ROYAL STEENSMA CARAMEL FILLING AND COMPOUND COCOA COATING
As the craze for caramel continues, Dawn Foods UK and Ireland has launched a versatile salted caramel filling as well as a compound cocoa coating, developed to give bakers an alternative in the face of high chocolate prices.
Ready-to-use straight from the pail, with no need to heat, the Salted Caramel Filling is made to an authentic recipe using condensed milk to give a rich, indulgent sweetness with a hint of sea salt. The filling can be injected into muffins, layered into cakes or pastries or used to fill donuts.
Dawn says that the popularity of caramel and particularly the sweet-salty combination in salted caramel is because it pairs with so many other flavours and ingredients including fruit, chocolate and nuts, so tapping into consumer desire for indulgence and texture in every bite.
Indeed, in the world of confectionery – often a barometer for trends in sweet bakery - caramel is one of the top flavours identified by consumers (54%) in Mintel’s Chocolate Confectionery 2024 report.
With further hikes in cocoa prices expected in 2025, Chocuise is a versatile compound coating that provides a simple and cost-effective alternative to chocolate but still gives a smooth finish and great chocolate flavour.
Made using Rain Forest Alliance Cocoa and segregated palm oil, Chocuise does not require tempering; the compound flakes are gently melted, then used to coat donuts, pastries and muffins to give a quick drying and contact-wrappable coating. Chocuise is available in dark, milk or white options.
